HERE'S AN EASY SPINACH DIP RECIPE
I usually don't follow a recipe when I am in the kitchen (or anywhere for that matter). Most of the dishes I prepare are concoctions of whatever I like, is healthy, happens to be around the house, and hasn't developed blue fur.
I recently mixed up the following, which makes a yummy spinach dip. I'll vouch for it. I ate the whole batchy yesterday with unsalted tortilla chips--and I'm not a large person--really. (I have nothing against large people, I just like to remain unnoticed for the most part.)
1 8-oz box Neufchatel cheese (aka 1/3 less fat cream cheese)
1 box frozen chopped spinach, defrosted & drained
1 clove garlic, minced (I use the stuff in a jar & sold in the produce dept) or some onion (optional)
1 cube vegetable boullion (dissolved in about a Tablespoon or so of the spinach water)
I use a brand called "Telma" which may or may not be found in the Jewish food dept. of your grocery
Mix it up. Chill for a while if you aren't real hungry. Eat with tortilla chips, or friends -- if you are lucky enough to have them. If you snack alone, remember to get the spinach from between your teeth.
Note: This has a lot of spinach in it, which is the way I like it. Use less if you like.
